My husband, Nick loves the Volcano blackened Mahi-Mahi at Rumbi Island grill, so yesterday I thought of copying it…it’s not like Rumbi’s but close…so yummy!
Here is my recipe for the Black Spice (you can double this if you have more than 3 pieces of mahi-mahi)
2 tsp paprika
1 tsp dried thyme
1 tsp dried basil
1 tsp onion powder
1/2 tsp ancho chili powder (optional)
1 tsp garlic powder
1 tsp cayenne pepper
1 tsp black pepper
1 tsp white pepper
1 tsp salt
Grill or pan fry it with a little olive oil.
When done grilling, drizzle the Mahi-mahi with lemon before serving.
