it’s my officemate’s birthday today so I have a reason to make cupcakes…I named it “joyful polka dot cupcakes” You can use your own favorite chocolate cake recipe but this frosting is so good, probably the best I’ve tasted.

Here’s the recipe: FRENCH CREAM ICING Makes enough to frost 24 cupcakes.

5 tablespoons flour 1 cup milk 1 cup butter 1 cup sugar 1 teaspoon vanilla Whisk together the flour and milk in a saucepan. Place the pan over medium heat and whisk until very thick. Remove from heat and cool. You can add vanilla if you want.

Meanwhile, mix the butter and granulated sugar in a stand mixer until creamy & fluffy. Add the cooled milk mixture to the creamed mixture and beat until it is smooth and stands in peaks.
